Cherry Bread

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cherries, pitted and chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan with butter or cooking spray.
  3. Mix the dry ingredients in a bowl: flour, sugar, baking powder, and salt.
  4. Cream the butter and sugar together until light and fluffy, about 3-4 minutes.
  5. Add the eggs one at a time, mixing well after each, then stir in the vanilla extract.
  6. Combine the wet and dry ingredients, alternating with the milk.
  7. Fold in the chopped cherries gently.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 55-60 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes
