Cherry Amaretto Upside-Down Cake

  • 1/4 cup unsalted butter (for browning)
  • 1/2 cup brown sugar, packed
  • 2 tbsp amaretto liqueur
  • 1/2 cup unsalted butter (for the cake batter)
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk (or dairy-free milk)
  • 1 tsp pure vanilla extract
  • 1 tbsp amaretto liqueur (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan by buttering it generously and sprinkling brown sugar evenly across the bottom.
  3. Arrange the drained maraschino cherries on top of the brown sugar in a decorative pattern.
  4. Melt 1/4 cup of unsalted butter over medium heat until golden, then pour it into a mixing bowl.
  5. Mix the granulated sugar with the browned butter until combined.
  6. Incorporate the eggs one at a time, mixing well after each addition.
  7. Add the whole milk and vanilla extract, followed by the amaretto, blending until just combined.
  8. Combine dry ingredients in another bowl and gradually fold into the wet mixture.
  9. Pour the batter over the cherries in the pan, ensuring even coverage.
  10. Bake for about 35-40 minutes, or until a toothpick inserted comes out clean.
  11. Cool for 10 minutes, then flip onto a serving plate.

Notes

Serve with powdered sugar, vanilla ice cream, or whipped cream for an extra treat. You can also try variations by substituting the cherries with berries or adding nuts.
