Brownie Bottom Cheesecake Bites

Decadent brownie bites topped with a creamy cheesecake layer and drizzled with chocolate ganache.

  • 1/2 cup unsalted butter (melted)
  • 1 cup granulated sugar
  • 1/2 cup Dutch-processed cocoa powder (sifted)
  • 8 oz cream cheese (full-fat, room temperature)
  • 2 oz dark chocolate (chopped for ganache)
  • 1/4 cup mini semi-sweet chocolate chips (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin with paper liners or grease it lightly.
  3. Mix together the melted butter and granulated sugar in a medium bowl.
  4. Add sifted Dutch-processed cocoa powder and gently fold in.
  5. Pour the brownie batter into each muffin cup, filling halfway, and bake for 10-12 minutes.
  6. Cool the brownies in the tin while preparing the cheesecake layer.
  7. Beat the cream cheese in a mixing bowl until smooth, then gradually add sugar.
  8. Combine cheesecake mixture over each brownie base, filling almost to the top.
  9. Bake again for 15-20 minutes until the center is set.
  10. Make the ganache by melting dark chocolate in the microwave or double boiler.
  11. Finish with drizzling the ganache over cheesecake bites and garnish with mini chocolate chips.
  12. Chill for at least 2 hours to set before serving.

Notes

These bites are perfect for gatherings and can be made ahead of time. Store in the refrigerator or freeze for later enjoyment.
