Brown Sugar Roasted Butternut Squash

A simple yet delicious side dish featuring caramelized butternut squash coated in brown sugar and spices.

  • 1 medium butternut squash (about 23 lbs)
  • 3 tbsp unsalted butter, melted
  • 3 tbsp light brown sugar, packed
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep the butternut squash by peeling, halving, and cubing it.
  3. Combine the squash with melted butter, brown sugar, cinnamon, nutmeg, salt, and black pepper in a mixing bowl.
  4. Spread the squash evenly on a parchment-lined baking sheet.
  5. Roast for 25-30 minutes, tossing halfway through.
  6. Check for doneness; it should be fork-tender and golden-brown.
