Sweet Potato Bread

A tender and flavorful bread made with mashed sweet potatoes, perfect for cozy mornings or as a delightful treat.

  • 1 cup mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your sweet potatoes by peeling, chopping, and boiling until tender, then mash until smooth.
  3. Mix your dry ingredients: whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Combine your wet ingredients: beat eggs, then mix in sweet potatoes, milk, vegetable oil, granulated sugar, and brown sugar.
  5. Combine the wet and dry ingredients gently until just mixed.
  6. Incorporate any optional nuts by folding them into the mixture.
  7. Pour the batter into a greased 9×5-inch loaf pan.
  8. Make the topping by mixing sugar and cinnamon, then sprinkle it over the batter.
  9. Bake for 50-60 minutes, or until a toothpick comes out clean.
  10. Cool the bread for 10 minutes in the pan, then transfer to a wire rack to cool completely.
