Heavenly Summer Peach Bars

Delightful peach bars that capture the essence of summer with a sweet and tangy filling and a crispy oat topping.

Ingredients

  • 2 cups fresh peaches, peeled and sliced
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×9 inch square baking dish with butter or parchment paper.
  3. Mix the flour, both sugars, rolled oats, baking powder, and salt in a bowl.
  4. Add the melted butter and vanilla extract. Stir until resembling wet sand.
  5. Prepare the sliced peaches by tossing them with sugar and cinnamon.
  6. Layer half of the oat mixture in the bottom of the dish, add peaches, and crumble the remaining mixture on top.
  7. Bake for 25-30 minutes until golden brown and bubbly.
  8. Cool in the pan for 10-15 minutes before slicing.

Notes

Serving suggestion: Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container at room temperature or in the fridge for up to a week.
