  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1 tablespoon cornstarch
  • Whipped cream or vanilla ice cream (for serving, optional)

Instructions

  1. Prepare the Brown Butter: Melt the unsalted butter in a medium saucepan over medium heat until it turns golden brown. Remove from heat and let cool slightly.
  2. Make the Crust: Combine flour, powdered sugar, and salt in a mixing bowl. Add browned butter and egg yolk; mix until coarse crumbs form. Gradually add cold water until dough comes together.
  3. Chill the Dough: Form dough into a ball, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  4. Prep the Peaches: Slice peaches and mix with brown sugar, vanilla, cinnamon, and cornstarch. Set aside to soak in flavors.
  5. Roll Out the Dough: Preheat oven to 375°F (190°C). Roll dough to 1/4 inch thick; cut circles to fit mini tart pans.
  6. Assemble the Tarts: Press dough circles into greased pans, fill with peach mixture.
  7. Bake: Bake for 25-30 minutes or until crust is golden and peach filling is bubbly.
  8. Cool and Serve: Allow to cool for 10 minutes, dust with powdered sugar, and serve with whipped cream or ice cream.
