Raspberry Nectarine Popsicles

Refresh yourself with homemade Raspberry Nectarine Popsicles, a perfect treat for hot summer days.

Ingredients

  • 1/4 cup unsweetened coconut water
  • 1 cup fresh or frozen red raspberries
  • 12 tablespoons maple syrup or honey (optional)
  • 1 cup vanilla Greek yogurt
  • 1 banana
  • 2 nectarines (pits removed and chopped)
  • 1 tablespoon maple syrup or honey (optional)

Instructions

  1. Prep your ingredients by washing the fruits and removing pits from nectarines. Toss all ingredients into a blender.
  2. Blend the coconut water, raspberries, optional sweetener, Greek yogurt, banana, and nectarines until smooth.
  3. Taste the mixture and adjust sweetness if needed.
  4. Pour half of the raspberry mixture into each popsicle mold and freeze for 30 minutes.
  5. Add the remaining nectarine mixture to fill the molds, leaving space at the top for expansion.
  6. Insert popsicle sticks and freeze for 4-6 hours until solid.
  7. Unmold the popsicles by running warm water over the molds and gently pulling them out.

Notes

These popsicles are naturally sweetened and can be customized with other fruits or flavors.
