Coffee Cake Cookies

Delightful cookies that combine the comforting flavors of traditional coffee cake with the convenience of a cookie.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • 1/2 cup powdered sugar (for icing)
  • 12 tbsp milk (for icing)

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Mix together the all-purpose flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. Cream softened butter with granulated and brown sugars until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, followed by vanilla extract, mixing until combined.
  5. Combine dry mixture with the wet ingredients, stirring until just combined.
  6. Scoop heaping spoonfuls of dough onto prepared baking sheets, spacing apart.
  7. Bake for 10-12 minutes or until edges are golden and centers look slightly underbaked.
  8. Let cookies cool on sheets for about 5 minutes, then transfer to a wire rack.
  9. Prepare the icing by whisking together powdered sugar and milk until smooth.
  10. Drizzle icing over cooled cookies using a fork for decoration.
