Butternut Squash-Apple Coffee Cake

A moist and flavorful coffee cake featuring butternut squash and tart apples, perfect for fall gatherings.

  • 1 cup peeled and grated butternut squash
  • 1 cup peeled and chopped apples (tart varieties recommended)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour your cake pan.
  2. Cream the butter, granulated sugar, and brown sugar together until light and fluffy.
  3. Add the eggs one at a time, then pour in the vanilla extract and mix well.
  4. Mix in the sour cream until smooth.
  5. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  6. Fold in the dry ingredients to the wet mixture until just combined.
  7. Add the grated squash, chopped apples, and walnuts, stirring to combine.
  8. Pour the batter into the prepared baking pan and smooth the top.
  9. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Can be served warm with powdered sugar or ice cream. This cake can also be frozen for up to three months.
