  • 2 apples, diced
  • 2 eggs
  • 1/2 cup oil
  • 3/4 cup brown sugar
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it with butter or non-stick spray.
  3. Mix the dry ingredients: in a large mixing bowl, whisk together the flour, brown sugar, and a pinch of salt.
  4. Add the wet ingredients: in another bowl, beat the eggs, mix in the oil, and add the diced apples before combining.
  5. Fold in the chopped walnuts, ensuring they’re evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, starting to check around 50 minutes.
  8. Cool the loaf in the pan for 10 minutes before transferring it onto a wire rack.
  9. Slice and serve the loaf once it has cooled fully.
