Apple Crisp Cheesecake

A delightful fusion of apple crisp and creamy cheesecake, topped with a crispy oat layer.

  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large apples (Granny Smith or Gala recommended)
  • 2 tablespoons brown sugar

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter, melted
  • 24 ounces full-fat cream cheese, room temperature
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream, room temperature
  • 3 large eggs, room temperature
  • Salted caramel sauce, for drizzling

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham crumbs, brown sugar, cinnamon, and melted butter in a bowl.
  3. Press this mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for about 10 minutes until slightly golden.
  5. Peel and slice your apples while the crust bakes.
  6. Toss the sliced apples with brown sugar and cinnamon.
  7. Combine flour, brown sugar, cinnamon, oats, and melted butter for the crisp topping.
  8. Add cream cheese, granulated sugar, and brown sugar to a bowl and beat until smooth.
  9. Incorporate cinnamon, cornstarch, vanilla, and sour cream, mixing until combined.
  10. Mix in the eggs, one at a time.
  11. Pour the cheesecake batter over the baked crust.
  12. Layer the apple filling on top of the cheesecake batter.
  13. Sprinkle the crisp topping generously over the apples.
  14. Wrap the bottom of your springform pan in aluminum foil.
  15. Place the pan in a larger baking dish and fill with boiling water halfway up the sides.
  16. Bake for 50-60 minutes until the edges are set.
  17. Cool in the oven for about an hour, then chill in the fridge for at least 4 hours.
  18. Slice and drizzle with salted caramel sauce before serving.

Notes

For extra flavor, sprinkle cinnamon on the plate when serving. You can add nuts to the crisp topping or try variations like pumpkin spice.
