Apple Cheesecake Streusel Buns

  • 400 g (4 cups) All-purpose flour
  • 200 ml (1 cup) Whole milk, warmed
  • 1 Large egg
  • 65 g Unsalted butter, softened
  • 10 g Instant yeast
  • 60 g (3 tbsp) Granulated sugar
  • 1 packet (8 g) Vanilla sugar
  • Pinch of salt
  • 200 g Cream cheese
  • 2 tbsp Sugar
  • 1 packet Vanilla sugar
  • 2 Apples, peeled and diced
  • 2 tbsp Brown sugar
  • 1 tsp Cinnamon
  • 1 tsp Cornstarch mixed with 1/2 cup water
  • 20 g (1 tbsp) Cold butter
  • 1 tbsp Sugar
  • 1/2 cup Flour
  • 1 cup Powdered sugar
  • 2 tbsp Milk
  • 1 Egg yolk

Instructions

  1. Make your dough: In a large mixing bowl, combine the warmed milk and instant yeast. Let it stand for about 5 minutes. Next, add in the softened butter, sugar, egg, and pinch of salt, mixing until combined. Gradually add in the flour, stirring until a soft dough begins to form.
  2. Knead the dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until it’s smooth and elastic.
  3. Let it rise: Place the kneaded dough in an oiled bowl and cover with a damp cloth or plastic wrap. Let it rise in a warm spot for about an hour or until it’s doubled in size.
  4. Prep the apple filling: In a bowl, toss the diced apples with brown sugar, cinnamon, and cornstarch mixture. Set aside.
  5. Make the cheesecake filling: In another bowl, combine the cream cheese, sugar, and vanilla sugar. Whip it until smooth and creamy.
  6. Streusel topping: For the streusel, mix the cold butter, flour, and sugar with your fingers until it resembles coarse crumbs.
  7. Roll it out: Once the dough has doubled, punch it down and roll it out on a lightly floured surface into a rectangle about 1/4 inch thick. Spread the cheesecake filling evenly over the dough, leaving about an inch around the edges.
  8. Layer it up: Evenly distribute the apple filling on top of the cheesecake layer.
  9. Roll it up: Starting from one of the long sides, roll the dough tightly into a log. Slice into 12 equal buns and place them on a greased baking dish.
  10. Second rise: Cover the buns with a cloth and let them rise for another 30 minutes. Meanwhile, preheat your oven to 180°C (350°F).
  11. Add your topping: Brush the tops of the buns with the egg yolk wash. Sprinkle generous amounts of streusel on top.
  12. Bake: Pop your buns into the oven and bake for 20-25 minutes, or until golden brown.
  13. Finish with glaze: While the buns cool, mix the powdered sugar and milk to create the glaze. Drizzle it gently over the buns.

Serve these warm with a sprinkle of powdered sugar on top, paired with coffee or tea for the ultimate treat.
