  • 4 cups Vegetable Broth (Low-sodium recommended)
  • 1 lb Rotisserie Chicken (Shredded)
  • 8 oz Fresh Mushrooms (Button or Cremini)
  • 1 medium Onion (Chopped)
  • 3 cloves Garlic (Minced)
  • 1 cup Heavy Cream
  • 1 tsp Thyme (Fresh preferred)
  • To taste Salt and Pepper
  • 2 tbsp Olive Oil (Can be replaced with butter)

Instructions

  1. Prep Your Ingredients: Start by chopping your onion and mincing the garlic. Slice your mushrooms into even pieces, and shred your rotisserie chicken.
  2. Sauté the Aromatics: In a large pot over medium heat, drizzle olive oil. Add chopped onion and garlic, sauté for about 3-4 minutes until translucent.
  3. Add the Mushrooms: Toss in sliced mushrooms and cook for about 5 minutes until they caramelize.
  4. Stir in Broth and Chicken: Add vegetable broth and shredded chicken, stir well, and bring to a simmer.
  5. Add the Cream and Thyme: Lower the heat, stir in heavy cream, thyme, and adjust salt and pepper to taste.
  6. Simmer and Serve: Allow to simmer for another 10-15 minutes, then taste and adjust seasonings if necessary.
  7. Prepare to Enjoy: Serve hot, best enjoyed with crusty bread or parsley on top.
