  • 1 cup oat flour
  • 1/2 cup coconut sugar
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground flaxseed and water in a small bowl and let sit for 5-10 minutes until gel-like.
  3. Whisk together almond flour, oat flour, coconut sugar, baking soda, cinnamon, and salt in a large mixing bowl.
  4. Pour in the melted coconut oil, maple syrup, and prepared flax egg; mix until combined.
  5. Fold in chopped pecans or walnuts if using.
  6. Scoop portioned dough onto a lined baking sheet.
  7. Flatten each cookie and create a swirl design on top.
  8. Bake for 12-15 minutes until golden around the edges.
  9. Cool cookies on the baking sheet for a few minutes before transferring to a wire rack.
  10. Enjoy! with tea or coffee.
