Tiramisu Cupcakes with Coffee Frosting

A delightful twist on the classic Italian tiramisu transformed into individual cupcakes with rich coffee frosting.

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • ½ cup strong brewed coffee (cooled)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup unsalted butter (softened) for frosting
  • 3 cups powdered sugar
  • 23 tbsp strong brewed coffee (cooled) for frosting
  • 1 tsp vanilla extract for frosting
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs, one at a time, followed by the vanilla extract, ensuring everything is well blended.
  4. Combine in a separate bowl the flour, baking powder, and salt.
  5. Mix the cooled coffee with a dash of vanilla extract in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the coffee mixture, and mix until just combined.
  7. Fill each cupcake liner about two-thirds full with the batter.
  8. Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
  9. Cool the cupcakes in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  10. Make the coffee frosting by beating the softened butter until creamy, then gradually adding the powdered sugar, cooled coffee, and vanilla extract until smooth.
  11. Frost each cooled cupcake generously with the coffee frosting.
  12. Dust with cocoa powder for decor.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
