Tasty Baked Breakfast Tacos

Delightful baked breakfast tacos filled with crispy bacon, seasoned potatoes, fluffy scrambled eggs, and topped with melty cheese.

  • 4 slices of bacon
  • 2 tbsp canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2 1/2 tbsp taco seasoning mix
  • 8 soft corn tortillas (6 inch)
  • 8 eggs, well beaten
  • 1/2 cup shredded Monterey Jack cheese (2 oz)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the bacon in a large skillet over medium heat until crispy, about 6-8 minutes.
  3. Remove the bacon from the skillet and drain on paper towels; crumble into bite-sized pieces.
  4. Sauté the potatoes in the same skillet with canola oil and taco seasoning, cooking until golden brown and tender (10-12 minutes).
  5. Whisk the eggs in a bowl and pour them into the skillet, mixing with the potatoes and bacon until cooked.
  6. Assemble by spooning the mixture into the center of each tortilla.
  7. Top with shredded Monterey Jack cheese.
  8. Bake in the preheated oven for about 10-12 minutes until the tortillas are crisp and cheese is melted.
  9. Serve with your favorite toppings.
