Sugar-Free Cheesecake Bars

A creamy and decadent cheesecake bar recipe that is sugar-free and guilt-free, perfect for satisfying your sweet tooth without the sugar rush.

  • 2 cups almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup erythritol or other sugar substitute
  • 2 cups cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup erythritol or other sugar substitute (for the filling)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: mixed berries for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare an 8×8-inch baking pan by lining it with parchment paper.
  3. Combine the almond flour, melted coconut oil, and erythritol in a mixing bowl.
  4. Press the mixture evenly into the bottom of the prepared pan.
  5. Bake the crust for 10-12 minutes, or until lightly golden brown.
  6. Beat together the cream cheese and erythritol for the filling until smooth.
  7. Add the sour cream, eggs, and vanilla extract, and mix just until combined.
  8. Pour the cheesecake filling over the baked crust.
  9. Bake for 25-30 minutes until the edges are set but the center has a slight jiggle.
  10. Cool the cheesecake in the oven for about an hour then chill for at least 3 hours in the fridge.
  11. Slice into squares and serve with mixed berries if desired.

Notes

Make sure the cream cheese is softened for easy mixing. Overmixing can lead to cracks in the cheesecake.
