  • ¾ cup Sugar
  • 1 cup Heavy Cream
  • 2 teaspoons unflavored Gelatin

Instructions

  1. Prepare the Strawberries by washing them thoroughly, removing green tops, and dicing. Sprinkle half of the sugar over them and let sit for 10-15 minutes.
  2. Make the Strawberry Puree by blending the macerated strawberries until smooth. Set aside to cool.
  3. Bloom the Gelatin by sprinkling it over 2 tablespoons of cold water in a small bowl and letting it sit for 5 minutes.

  5. Whip the Cream in a separate bowl until soft peaks form.

  7. Chill the mousse in dessert glasses and cover with plastic wrap. Let it chill in the refrigerator for at least 240 minutes or overnight.
  8. Serve the mousse topped with whipped cream and fresh strawberries.

Notes

For a vegan option, use coconut cream and agar-agar instead of gelatin.
