  • 2 cups sweet rice flour (glutinous rice flour)
  • 1 cup water
  • 1/4 cup sugar
  • 1/2 cup strawberries, hulled and halved
  • Cornstarch or potato starch for dusting

Instructions

  1. Prepare Your Work Area: Sprinkle a generous amount of cornstarch or potato starch over your work surface.
  2. Mix the Mochi Dough: In a microwave-safe bowl, combine the sweet rice flour, sugar, and water.
  3. Cook the Dough: Cover the bowl with plastic wrap and microwave for about 1 minute, stir and repeat for a total of 4 minutes.
  4. Knead the Dough: Once slightly cooled, knead the dough for a minute until smooth and pliable.
  5. Form the Mochi: Divide the dough, place a strawberry half in the center, seal, and roll into a ball.
  6. Dust the Mochi: Roll each piece in cornstarch to prevent sticking.
  7. Chill and Serve: Let the finished mochi sit for about 30 minutes before serving.

Notes

For best texture, cover the mochi and let them sit at room temperature before serving.
