Strawberry Cheesecake Cookies

Delicious cookies that combine the creamy richness of cheesecake with the chewy goodness of cookies and a burst of fresh strawberries.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped fresh strawberries
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for cheesecake filling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter and sugar until light and fluffy.
  3. Add the egg and vanilla, mix until combined.
  4. Combine dry ingredients in another bowl, then gradually add to wet mixture.
  5. Fold in the chopped strawberries.
  6. Make the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla until smooth.
  7. Scoop about a tablespoon of dough onto a baking sheet, creating a well in the center.
  8. Add about a teaspoon of cheesecake filling into the well.
  9. Bake for 12-15 minutes until edges are golden.
  10. Cool on baking sheet before transferring to a wire rack.

Notes

For an extra treat, drizzle melted chocolate on top once cooled or add lemon zest to the cheesecake filling.
