Strawberry Cheesecake Brownies

A delightful twist on classic brownies with a creamy cheesecake layer and strawberry pie filling.

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup Dutch-processed cocoa powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter (melted and cooled)
  • 16 ounces cream cheese (room temperature)
  • 2 large eggs
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups strawberry pie filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking pan by greasing or lining it with parchment paper.
  3. Mix the granulated sugar, flour, cocoa powder, salt, and baking powder in a large mixing bowl. Whisk until well combined.
  4. Beat the eggs and vanilla extract in a separate bowl, then mix into the dry ingredients along with the melted butter.
  5. Pour half of the brownie batter into the prepared baking pan, smoothing it out into an even layer.
  6. Beat the cream cheese until smooth in another bowl. Add the eggs, sugar, vanilla extract, and salt, and mix until creamy.
  7. Pour the cheesecake mixture over the brownie base, spreading it evenly. Then dollop the strawberry pie filling on top and swirl gently.
  8. Drop spoonfuls of the remaining brownie batter over the cheesecake and strawberry layers.
  9. Bake for 35-40 minutes until edges are set.
  10. Cool in the pan for 30 minutes, then transfer to the fridge to chill for at least 2 hours.
  11. Slice into squares and serve!

Notes

Serve with a dusting of powdered sugar and a drizzle of chocolate sauce for extra indulgence.
