  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham
  • 1/4 cup chopped chives
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup butter, softened
  • 1 egg

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix together 1 cup of all-purpose flour, 2 teaspoons of baking powder, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper in a large bowl.
  3. Add 1 cup of shredded cheddar cheese and 1/2 cup of diced ham to the mixture and fold gently.
  4. Add 1 cup of cottage cheese and 1/4 cup of chopped chives, stirring until just combined.
  5. Prepare a separate mixture of 1 egg and 1/4 cup of softened butter, then combine with the dry mix.
  6. Shape the dough on a floured surface to about 1 inch thick and cut into rounds.
  7. Bake for 15-20 minutes until golden brown.
  8. Cool slightly on a rack before serving.

Notes

For a vegetarian option, you can skip the ham or substitute with sautéed greens or mushrooms.
