Roasted Strawberry Whipped Ricotta Toast

A delightful summer-inspired toast topped with creamy whipped ricotta and sweet roasted strawberries.

  • 4 slices sourdough bread
  • 1 cup ricotta cheese
  • 2 cups strawberries, hulled and halved
  • 2 tablespoons balsamic vinegar
  • 12 tablespoons honey or sugar (optional)
  • Pinch of salt
  • Freshly cracked black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the halved strawberries with balsamic vinegar, salt, and honey for about 15-20 minutes until caramelized.
  3. Prepare the ricotta by whipping it with salt and pepper until creamy.
  4. Toast the sourdough slices until golden brown.
  5. Assemble the toast by spreading whipped ricotta on each slice, topping with roasted strawberries, and a drizzle of balsamic vinegar.

Notes

Serve immediately after assembling to prevent sogginess. You can prepare the strawberries and ricotta ahead of time.
