  • 2 cups blueberries (fresh or frozen)
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish and grease it with butter.
  3. Cube your French bread into roughly 1-inch pieces and place in the greased dish.
  4. Add the blueberries over the bread.
  5. Whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt.
  6. Pour the egg mixture evenly over the bread and blueberries.
  7. Let it sit for about 10 minutes to absorb the custard.
  8. Bake covered with foil for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden.
  9. Cool for 5-10 minutes before serving.

Notes

This casserole can be prepared the night before for an easy brunch the next day. Adjust sweetness by substituting sugar with honey or maple syrup if desired.
