Delightfully Creamy Pistachio Frozen Yogurt Cups

A refreshing homemade treat that blends creamy Greek yogurt with crunchy pistachios, sweetened with honey or agave syrup.

  • 2 cups Greek yogurt
  • 1/2 cup honey or agave syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the pistachios by toasting them in a dry skillet over medium heat for about 5 minutes, stirring frequently.
  2. Blend the toasted pistachios, Greek yogurt, honey, vanilla extract, and salt in a food processor until smooth.
  3. Taste the mixture and adjust the sweetness or salt as necessary.
  4. Spoon the yogurt mixture into your chosen cups, tapping gently to remove air bubbles.
  5. Freeze for at least 4 hours or overnight until firm.
  6. Serve the cups after allowing them to soften at room temperature for about 5 minutes, topping with reserved pistachios and a drizzle of honey if desired.

Notes

These yogurt cups can last up to 2 months in the freezer if kept covered to avoid freezer burn. Feel free to mix in fruits or different nuts for variation.
