Pesto Grilled Cheese

A gourmet twist on a classic comfort food, this Pesto Grilled Cheese is filled with gooey cheese and vibrant pesto flavors.

  • 2 slices of bread (sourdough, whole grain, or ciabatta)
  • 2 slices of cheese (mozzarella, cheddar, provolone, or fontina)
  • 2 tablespoons of pesto (basil or sun-dried tomato)
  • Butter (for grilling)

Instructions

  1. Prep your ingredients: Gather all your ingredients on the countertop and let the butter sit at room temperature for about 10 minutes.
  2. Butter your bread: Butter one side of each slice of bread generously.
  3. Spread the pesto: On the unbuttered side of one slice, spread about a tablespoon of pesto evenly.
  4. Add your cheese: Layer on the cheese slices thickly for gooey bites.
  5. Close it up: Place the other slice of bread on top, butter side facing out.
  6. Heat your pan: Place a non-stick skillet over medium heat to warm it up.
  7. Grill time: Place your sandwich in the skillet and cook for about 3-4 minutes until golden-brown.
  8. Flip & cook again: Flip the sandwich and cook for another 3-4 minutes until both sides are browned and the cheese is melted.

Notes

For a crispy finish, use room temperature butter and consider various bread types for added texture.
