One-Pot Creamy Spicy Cajun Sausage Pasta

  • 1 lb smoked sausage
  • 12 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 1 bell pepper
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil

Instructions

  1. Sauté the sausage in a large pot with olive oil over medium heat until browned.
  2. Add the chopped onion and bell pepper, sautéing until softened.
  3. Incorporate minced garlic and cook until fragrant.
  4. Stir in diced tomatoes, scraping the bottom to deglaze.
  5. Sprinkle with Cajun seasoning and paprika, then stir well.
  6. Add penne pasta and chicken broth; bring to boil, then simmer covered until pasta is al dente.
  7. Stir in heavy cream and half of the Parmesan cheese until creamy.
  8. Taste and adjust seasoning as necessary.
  9. Serve immediately topped with remaining Parmesan and parsley.
