One-Pan Cowboy Butter Tortellini Steak Bites

A delicious and hearty one-pan meal combining tender steak and cheese tortellini in a rich cowboy butter sauce.

  • 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
  • 1 tsp Cajun seasoning (or to taste)
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tsp Dijon mustard
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 12 oz cheese tortellini (fresh or refrigerated)
  • ½ cup grated Parmesan cheese
  • ½ cup reserved pasta water

Instructions

  1. Prepare the Steak: Season the steak cubes with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.
  2. Sear the Steak: Heat olive oil in a skillet over medium-high heat. Add the seasoned steak cubes and cook for 2-3 minutes until golden, then flip and cook for another 2-3 minutes.
  3. Make the Cowboy Butter Sauce: Reduce the heat, add unsalted butter and minced garlic, mixing to create a luscious sauce.
  4. Add Red Pepper Flakes and Dijon: Stir in red pepper flakes (if using) and Dijon mustard, mixing well. Drizzle in lemon juice.
  5. Cook the Tortellini: Cook the tortellini according to package instructions, reserving ½ cup of pasta water before draining. Add drained tortellini to the skillet.
  6. Combine and Adjust: Toss everything together in the skillet, adding grated Parmesan cheese and reserved pasta water until creamy.
  7. Garnish: Add chopped parsley and chives, stirring to combine before serving.
  8. Serve Up: Plate the dish, sprinkle with additional Parmesan, and enjoy!

Notes

For added variety, consider substituting steak with sautéed vegetables for a vegetarian option, or try different types of pasta.
