No-Bake Vegan Banana Bites

  • 1 cup rolled oats
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup maple syrup or agave nectar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional toppings: chopped nuts, coconut flakes, vegan chocolate chips

Instructions

  1. Mash the bananas in a large mixing bowl until smooth.
  2. Combine the oats, almond (or peanut) butter, maple syrup (or agave), vanilla extract, and salt. Mix until well combined.
  3. Chill the mixture in the fridge for 10-15 minutes to firm up.
  4. Form bite-sized balls (about 1 inch) from the mixture.
  5. Add optional toppings if desired.
  6. Store in an airtight container in the fridge for up to a week.
