No Bake Oreo Cheesecake Bites

Delightful no-bake cheesecake bites made with Oreo cookies and cream cheese, perfect for any occasion.

  • 1520 Oreo Cookies, crushed into fine crumbs
  • 2 tablespoons light butter or coconut oil, melted
  • 2 packages (8 ounces each) reduced-fat cream cheese, softened
  • 1/2 to 3/4 cup sweetener of choice (erythritol, monk fruit, or stevia blend)
  • 1 teaspoon vanilla extract
  • 1 container (8 ounces) light whipped topping, thawed
  • 810 Oreo cookies, chopped into small chunks
  • Optional: Whipped topping and Oreo pieces for garnish

Instructions

  1. Prepare the Oreo Crust: In a mixing bowl, combine the crushed Oreo cookies and melted butter (or coconut oil). Mix until the crumbs are evenly coated.
  2. Press into Molds: Scoop about a tablespoon of your crust mixture into each cup of a mini muffin tin and press firmly down.
  3. Make the Heavenly Filling: Beat softened cream cheese until smooth. Gradually incorporate your sweetener and vanilla extract.
  4. Fold in the Whipped Topping: Gently fold in thawed whipped topping with a spatula, then add Oreo chunks.
  5. Fill the Muffin Tin: Spoon the cream cheese mixture into each muffin cup on top of the crust.
  6. Chill Until Ready to Serve: Cover with plastic wrap and refrigerate for at least 4 hours.
  7. Remove and Garnish: Pop the cheesecake bites out of the molds and top with whipped topping and Oreo crumbs.

Notes

These cheesecake bites are easily customizable to suit your taste preferences. They can be frozen for up to three months.
