A light, refreshing dessert made with creamy chia pudding, zesty lime, and delightful coconut. Perfect for meal prep and tropical snacking!

  • 4 cups almond milk (or any milk of choice)
  • 1/4 cup honey or maple syrup
  • 1/2 cup shredded coconut
  • Zest of 2 limes
  • Juice of 2 limes
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare your pans by lining an 8×8-inch baking dish with parchment paper.
  2. Mix the milk and chia seeds in a large mixing bowl. Stir gently to combine.
  3. Combine the flavors by adding zest and juice of 2 limes, vanilla extract, honey, and salt.
  4. Let the mixture rest for 15-20 minutes to hydrate.
  5. Add the coconut and fold gently into the mixture.
  6. Spread the mixture into the prepared baking dish and smooth the top.
  7. Set the dish in the fridge for at least 4 hours.
  8. Cut into bars and serve chilled.

Notes

These bars are great for meal prep and can be stored in the fridge for up to a week. They can also be frozen individually.
