Marry Me Shrimp Pasta

A delightful shrimp pasta dish that’s said to sweep your loved ones off their feet and may even lead to a proposal!

  • 8 oz gluten-free pasta
  • 1 lb shrimp, peeled and deveined
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add your gluten-free pasta and cook according to package instructions until al dente. Pro Tip: Reserve about 1 cup of pasta water before draining!
  2. Sauté the shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Toss in the shrimp and sauté for about 3-4 minutes until they turn pink and opaque.
  3. Add the sun-dried tomatoes: Stir in the chopped sun-dried tomatoes, mixing well with the shrimp. Let them cook together for another minute.
  4. Create the creamy sauce: Pour in the heavy cream and chicken or vegetable broth. Bring the mixture to a gentle simmer and let it cook for 2-3 minutes until it thickens slightly.
  5. Add the cheese and seasonings: Gradually whisk in the grated Parmesan cheese until it melts. Sprinkle in the Italian seasoning, salt, and pepper. Adjust seasoning as needed.
  6. Combine with pasta: Add the cooked pasta to the skillet, tossing it in the sauce to coat.
  7. Plate up: Serve the pasta in bowls, garnished with fresh basil and an extra sprinkle of Parmesan cheese.

Notes

Feel free to experiment with substitutions like scallops or chicken in place of shrimp, and use coconut cream for a lighter or vegan option.
