Freezer Breakfast Burritos

Quick and customizable breakfast burritos that are perfect for meal prep and busy mornings.

Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs and milk, adding salt and pepper.
  3. Cook the breakfast sausage in a skillet until browned and crumbled.
  4. Add the whisked eggs to the skillet and scramble with the sausage.
  5. Mix in the cheddar and Monterey Jack cheese until melted.
  6. Assemble the burritos by placing 1/3 cup of the egg mixture on each tortilla and rolling them tightly.
  7. Heat vegetable oil in a skillet and cook the burritos seam-side down until golden.
  8. Cool the burritos before wrapping them in aluminum foil or plastic wrap.
  9. Freeze the burritos in a freezer bag for future meals.
  10. Reheat in the microwave or oven when ready to enjoy.
