  • 3 tablespoons Butter
  • 3 tablespoons All-Purpose Flour
  • 2 cups Milk
  • 2 cups Sharp Cheddar Cheese, shredded
  • 1 teaspoon Paprika
  • Salt to taste
  • Black Pepper to taste
  • 1 cup Breadcrumbs, for topping

Instructions

  1. Cook the macaroni: In a large pot, bring salted water to a rolling boil. Add the macaroni and cook according to package instructions until al dente. Stir occasionally to prevent sticking.
  2. Make the roux: In a separate pot, melt the butter over medium heat. Whisk in the flour to create a roux, stirring continuously for 2-3 minutes until light golden.
  3. Add the milk: Slowly whisk milk into the roux, cooking until it thickens, about 5-7 minutes.
  4. Incorporate the cheese: Reduce heat to low, gradually add cheese, stirring until melted and creamy.
  5. Season the sauce: Add paprika, salt, and black pepper to taste. Adjust consistency with reserved pasta water if needed.
  6. Combine pasta and sauce: Fold cooked macaroni into cheese sauce until fully coated.
  7. Prepare to bake: Preheat oven to 350°F (175°C). Transfer macaroni mixture into a greased baking dish.
  8. Bake to perfection: Bake for 20-25 minutes, until golden brown and bubbly.
  9. Serve and enjoy: Allow to rest for a few minutes before serving, garnishing with fresh herbs as desired.
