Zesty Lemon Rice

  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 23 green chilies, chopped
  • 1/4 teaspoon turmeric powder
  • 1/4 cup peanuts
  • Juice of 1 lemon
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. Prep your ingredients by gathering everything and cooking the rice ahead of time.
  2. Heat the oil in a pan over medium heat until shimmering.
  3. Add mustard seeds and let them pop, then toss in urad dal and stir until golden brown.
  4. Sauté the green chilies for one minute.
  5. Mix in turmeric powder, followed by the cooked rice, folding everything together.
  6. Add peanuts and lemon juice, stirring gently to combine.
  7. Season with salt to taste, adjusting seasoning as needed before serving.
  8. Garnish with fresh coriander and serve warm.

Notes
