Lemon Raspberry Cookies

Delightful cookies combining zesty lemon and tart raspberries for a burst of flavor.

Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugars together until light and fluffy.
  3. Add the eggs one at a time and mix until blended.
  4. Zest and juice the lemons, and mix into the batter.
  5. Combine the dry ingredients in a separate bowl.
  6. Mix the dry ingredients into the wet mixture until just combined.
  7. Fold in the fresh raspberries gently.
  8. Scoop the dough onto lined baking sheets, leaving space between cookies.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes before transferring to wire racks.

Notes

These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week.
