Delightful lemon brownies, known as ‘Lemonies’, offering a chewy, cake-like texture and a zesty lemon flavor.

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Zest of 2 lemons
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  3. Melt the butter in a medium saucepan over low heat.
  4. Mix the granulated sugar into the melted butter until well combined, then whisk in the eggs and vanilla extract.
  5. Add the flour, baking powder, and salt to the mixture and fold gently until combined.
  6. Incorporate the lemon zest evenly into the batter.
  7. Transfer the batter to the prepared baking dish and spread it evenly.
  8. Bake for about 25-30 minutes, until edges are golden and a toothpick comes out clean.
  9. Cool the brownies completely, then whisk together powdered sugar and lemon juice for the glaze.
  10. Glaze the brownies and let it set before slicing.
