Lemon Blueberry Cheesecake Cookies

Delightful cookies bursting with tangy lemon and sweet blueberries, combined with a creamy cheesecake filling.

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon zest
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 6 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract (for the filling)
  • ¾ cup fresh blueberries
  • 1 tbsp lemon juice
  • 1 tbsp sugar (for sprinkling on top)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream the butter and sugar together until light and fluffy.
  4. Mix in the egg and vanilla extract until combined.
  5. Add the lemon zest, flour, baking powder, and salt to the mix.
  6. Prepare the cream cheese filling by mixing cream cheese, powdered sugar, lemon juice, and vanilla extract.
  7. Fold in the fresh blueberries into your cookie dough.
  8. Drop rounded balls of dough onto the prepared baking sheet.
  9. Add the cream cheese filling into the center of each cookie dough ball.
  10. Sprinkle with sugar and bake for 12-15 minutes.
  11. Cool slightly before transferring to a wire rack.

Notes

These cookies are best enjoyed fresh, but can be stored in an airtight container or frozen for later enjoyment.
