Juicy Grilled California Avocado Chicken

A flavor-packed dish combining juicy grilled chicken with the creaminess of ripe avocados, perfect for summer evenings.

  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Marinate the Chicken: In a bowl, combine the lime juice, olive oil, garlic powder, paprika, salt, and pepper. Whisk until well blended. Add chicken breasts to the marinade, making sure they are fully coated. Let them sit for at least 30 minutes (or up to 2 hours for deeper flavor).
  2. Prep the Grill: Preheat your grill to medium-high heat.
  3. Grill the Chicken: Place the marinated chicken breasts on the grates. Grill for about 6-7 minutes on each side or until internal temperature reaches 165°F (75°C).
  4. Grill the Avocados: Slice the avocados in half, remove the pit, and brush the inside with olive oil. Grill for 2-3 minutes cut-side down.
  5. Incorporate the Tomatoes: Toss the halved cherry tomatoes in olive oil, salt, and pepper, and grill for about 4-5 minutes until they start to blister.
  6. Assemble Your Dish: Slice the grilled chicken and plate alongside the grilled avocado halves and blistered tomatoes. Drizzle with any leftover marinade if desired.

Notes

For a spicy kick, add cayenne pepper. Consider vegetarian options using firm tofu or portobello mushrooms.
