Ingredients

Scale
  • 4 Chicken Breasts
  • 1 Cup Honey BBQ Sauce
  • 2 Pounds Potatoes, Diced
  • 1 Cup Shredded Parmesan Cheese
  • 4 Cloves Garlic, Minced
  • 2 Tablespoons Olive Oil
  • Salt and Pepper to Taste
  • Fresh Parsley for Garnish (Optional)

Instructions

  1. Prep the Chicken: Preheat your oven to 375°F (190°C) and season chicken breasts with salt and pepper.
  2. Sear the Chicken: Heat 1 tablespoon of olive oil in a large oven-safe skillet and sear each side of the chicken for 4-5 minutes until golden brown.
  3. Add the BBQ Sauce: Pour the honey BBQ sauce over the chicken, ensuring each breast is coated, and cover the skillet.
  4. Bake the Chicken: Transfer the skillet to the oven and bake for 25-30 minutes until the internal temperature reaches 165°F.
  5. Prepare the Potatoes: Toss diced potatoes with remaining olive oil, minced garlic, salt, and pepper in a large bowl.
  6. Add the Parmesan: Sprinkle shredded Parmesan cheese over the potato mix, ensuring even coverage.
  7. Roast the Potatoes: Spread potatoes on a baking sheet in a single layer and roast for 30-35 minutes, flipping halfway through.
  8. Check for Doneness: Ensure chicken is coated in BBQ glaze and potatoes are golden and tender.
  9. Make it Pretty: Let chicken rest before slicing. Serve with golden potatoes and garnish with parsley.

Notes

You can customize the BBQ sauce for added spice or switch up the cheese for a different flavor profile.
