Healthy Nut & Seed Energy Cookies

Delicious and nutritious energy cookies packed with wholesome nuts and seeds, perfect for a pick-me-up anytime.

Ingredients

  • 1 cup mixed nuts (e.g., almonds, walnuts, pecans)
  • 1/2 cup seeds (e.g., pumpkin seeds, sunflower seeds)
  • 1 cup rolled oats
  • 1/2 cup nut butter (e.g., almond butter, peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: in a large mixing bowl, combine the mixed nuts, seeds, and rolled oats.
  3. Add the wet ingredients: in a separate bowl, combine the nut butter, honey (or maple syrup), vanilla extract, and salt, and blend until smooth.
  4. Combine both mixtures by pouring the wet mixture into the dry ingredients.
  5. Scoop and shape: drop the cookie mixture onto a baking sheet lined with parchment paper, flattening them slightly.
  6. Bake for about 12–15 minutes or until golden around the edges.
  7. Cool for 5 minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

These cookies can be customized with dried fruits, chocolate chips, shredded coconut, or spices for added flavor!
