  • 1/2 cup low-fat yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar substitute (optional)
  • 1 cup ricotta cheese
  • 1 tablespoon honey (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Combine the dry ingredients: In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  2. Mix the wet ingredients: In a separate bowl, combine the grated carrots, applesauce, yogurt, eggs, vanilla, and the sugar substitute (if using).
  3. Make the batter: Gradually add the dry ingredients into the wet mixture, folding gently.
  4. Bake the cake: Pour the batter evenly into prepared cake pans and bake in the preheated oven for 25–30 minutes.
  5. Cool the cakes: Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack.
  6. Prepare the frosting: In a medium bowl, mix together the ricotta cheese, honey, and vanilla until smooth.
  7. Frost the cake: Once the cakes are cool, spread frosting between the layers and cover the top and sides.

Notes
