Healthy Carrot Cake Oatmeal Cookies

  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, whisk together rolled oats, almond flour, baking powder, cinnamon, and salt.
  4. In another bowl, combine grated carrots, melted coconut oil, honey (or maple syrup), and vanilla extract.
  5. Gradually add the wet mixture to the dry ingredients and fold them together until just combined.
  6. Scoop generous dollops of the cookie dough onto the prepared baking sheet.
  7. Bake for about 12-15 minutes until edges are golden brown.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
