Healthy Carrot Cake Oatmeal Breakfast Cookies

Delightful cookies that capture the essence of carrot cake with healthy ingredients, perfect for breakfast or a snack.

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup mashed banana or applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon baking powder
  • 1/4 cup raisins or walnuts (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Combine the rolled oats, cinnamon, nutmeg, baking powder, and a pinch of salt in a large bowl.
  4. Whisk together the grated carrots, mashed banana (or applesauce), and honey (or maple syrup) in another bowl.
  5. Pour the wet ingredients into the dry ingredients and stir until combined.
  6. Fold in the raisins or walnuts if using.
  7. Scoop heaping tablespoons of dough onto the prepared baking sheet.
  8. Bake for 12–15 minutes until lightly golden.
  9. Let cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

These cookies freeze well. Store in an airtight container for up to a week.
