Healthy Carrot Cake Cookies

A wholesome twist on the classic carrot cake, these cookies are packed with nutritious goodness and perfect for any occasion.

Ingredients

  • 1 1/4 cup rolled oats
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/3 cup shredded carrots
  • 1 egg
  • 1/4 cup almond butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • (optional) 1/4 cup chopped walnuts or pecans
  • 1/4 cup coconut butter
  • 12 tbsp almond milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a bowl: rolled oats, almond flour, baking powder, cinnamon, nutmeg, and salt.
  3. Shred the fresh carrots using a box grater or food processor.
  4. Combine the shred carrots, egg, almond butter, maple syrup, and vanilla in another bowl and whisk until fully combined.
  5. Bring the wet ingredients into the dry and gently fold together until just combined.
  6. Adjust the texture with almond milk if it looks too dry.
  7. Add nuts if using.
  8. Scoop the dough onto a lined baking sheet.
  9. Bake for 12-15 minutes until edges are golden.
  10. Cool on baking sheet for a few minutes before transferring to a wire rack.

Notes

Pair cookies with a warm cup of tea or a glass of almond milk for a perfect snack.
