Healthy Carrot Cake Bars

A wholesome treat, these Healthy Carrot Cake Bars are deliciously moist, packed with nutrition, and perfect for any time of day.

Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking dish.
  3. Mix the dry ingredients.
  4. Combine the wet ingredients.
  5. Combine both mixtures!
  6. Fold in your nuts.
  7. Pour the mixture into your prepared baking dish.
  8. Bake in the oven for about 25-30 minutes.
  9. Cool and Cut.

Notes

These bars are great served with a dollop of Greek yogurt or a drizzle of dark chocolate. You can also customize them with dried fruits or different nuts.
