Healthy Brownies

Guilt-free brownies made with black beans, rich in protein, fiber, and flavor.

Ingredients

  • 1 cup black beans (rinsed and drained)
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Blend the black beans, cocoa powder, honey, peanut butter, eggs, vanilla extract, baking powder, and salt until smooth.
  3. Fold in the chocolate chips, if using.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes.
  5. Cool in the pan for 10 minutes, then slice into squares and enjoy!

Notes

For a vegan version, substitute eggs with flax eggs. Store in an airtight container at room temperature for up to 5 days.
