  • 1/4 cup coconut flour
  • 2 tablespoons erythritol or sweetener of choice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • Cinnamon sugar (for coating)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Combine the almond flour, coconut flour, erythritol, baking powder, salt, and cinnamon in a medium bowl.
  3. Mix the unsweetened applesauce, melted coconut oil, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients, and mix until just combined.
  5. Roll small portions of the dough into balls, about a tablespoon each.
  6. Spray the air fryer basket with cooking spray and place the churro balls, ensuring they are not touching.
  7. Air fry for about 8-10 minutes or until golden brown, checking at the 6-minute mark.
  8. Toss the warm churro bites in the cinnamon sugar mixture.
  9. Serve immediately with a side of melted dark chocolate or yogurt dip.
