Grilled Cheese Burrito

A delicious mashup of gooey cheese and crispy tortillas, perfect for a quick meal or gathering with friends.

Ingredients

  • 2 large tortillas (flour, whole wheat, or corn)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 tablespoon butter (or margarine/olive oil for dairy-free)
  • Optional fillings: cooked bacon, sautéed vegetables, black beans

Instructions

  1. Heat a skillet over medium heat.
  2. Butter one side of each tortilla.
  3. Place one tortilla in the skillet, butter-side down and top with half of the cheese.
  4. Add your optional fillings over the cheese, then top with remaining cheese and another tortilla, butter-side up.
  5. Flip the burrito once the bottom is golden brown, about 2-3 minutes.
  6. Press gently while cooking the second side for another 2-3 minutes until crispy.
  7. Slice in half and serve immediately.

Notes

Serve with salsa or guacamole and a fresh salad for balance. Experiment with different fillings and flavor combinations!
